This is called "mamuang phrik water." There is the mix of palm sugar red pepper red shallots and dried shrimp paste shrimp mango green in the middle.
Add shrimp paste into mortar to pound the shallots and dried shrimp. Also add hot pepper, sugar, fish sauce and shredded green mango final.
